New York Style Pizza Sauce

Ingredients

  • 1 28 ounce can crushed tomatoes
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 medium cloves garlic (about 2 teaspoons)
  • 1 teaspoon dried oregano
  • 2 6-inch sprigs fresh basil with leaves (or about 1 tablespoon dried)
  • 1 pinch red pepper flakes
  • Kosher salt to taste
  • 1 medium onion, peeled and cut in half
  • 1 teaspoon sugar

Method

Step 1

Combine butter and oil in large skillet and heat over medium heat until butter is melted. Add garlic, oregano, pepper flakes, and salt (and basil only if using dried) and cook, stirring frequently, until fragrant but not browned. Add tomatoes, fresh basil (if using), onion halves, and sugar. Bring to a simmer, then reduce heat to lowest setting and cook, stirring occasionally, until reduced by half (about 1 hour. Discard onions and basil (if using fresh). Season to taste with additional salt if necessary. Keeps in the refrigerator for 2 weeks, or freeze.
