Chicken Tandoori

Ingredients

  • 2 lb chicken
  • 5 Tablespoons Yogurt
  • 2 Tablespoons Vinegar
  • 2 Tablespoons Lemon Juice
  • 2-3 Tablespoons Olive Oil
  • 1 Tablespoon Garlic
  • 1 Tablespoons Ginger
  • 1/4-1/2 packet Tandoori spice mix (pre-packaged or see recipe) – amount depends on your taste…if you don’t eat spicy food regularly, you may want to start with 1-2 Tablespoons and increase from there.

Method

Step 1

Preheat oven to 400 degrees.

Step 2

Combine all ingredients except chicken in a bowl and mix well.

Step 3

Add chicken to ingredients and use your hands to ensure chicken pieces are fully coated with the mixture.

Step 4

Marinate for at least 45 minutes.

Step 5

Bake in baking dish for 35-40 minutes.

Step 6

Turn oven to Broil and finish cooking on broil for 5 minutes.

Step 7

Serve with naan or rice.
